Below the Line 2015: Preparation and Lists

Tomorrow I start Day One of my Live Below the Line challenge, trying to raise awareness for billions of people living in poverty. For five days, I have five pounds to feed myself all meals and any drinks other than tap water – given the salad I bought from Pret a Manger yesterday was over £5 itself I’ll obviously  be cooking all my meals!

My main priority is food, rather than tea or coffee, and so I’ve planned my ingredients to try and nourish my body suitably and I’ll just have to get on with being caffeine free for five days. To be honest, what I’ll find hardest is living without my beloved squash. I get through a horrific 1.5 litres of the stuff every 7 days. I know it’s full of bad stuff, but it’s my one true vice. I figure in comparison to smoking, drinking and drugs in excess, my squash addiction is ok. Still… “Squash Withdrawal” is on the horizon!

The Shop

I got lucky with my shop – I found a half price stew pack that had carrots, onion, a parsnip and swede in. I’ll be more carb-heavy this week than I’ve been in a long time, that’s for sure! There’s a pack of 10 eggs and a butternut squash I forgot to put in the photo, and with my spare change (just over 50p, with current spice projections already subtracted) I think I’ll either get some broccoli or perhaps some cheap custard or something as a treat. Probably broccoli to be honest!

The Plan

I waited for the Aldi Super 6 to come out before planning my meals, and prepped with a little reccie to my local Tesco to find out if they still gave away fresh yeast (they do). In the end, I came up with this (subject to change as the week progresses!)

Monday

  • Breakfast: Homemade Toast with Banana Cinnamon Spread
  • Lunch: Roasted Butternut Squash & Carrot Soup with 1 slice homemade bread
  • Dinner: Egg fried rice and veg
  • Snacks/Pudding: Boiled egg or a slice of pineapple

Tuesday

  • Breakfast: 2 eggs on Homemade Toast
  • Lunch: Roasted Butternut Squash & Carrot Soup with 1 slice homemade bread
  • Dinner: Kidney bean & Carrot burgers topped with poached egg, pineapple, with rice
  • Snacks/Pudding: Boiled egg or a slice of pineapple

Wednesday

  • Breakfast: Homemade Toast with Banana Cinnamon Spread
  • Lunch: Roasted Butternut Squash & Carrot Soup with 1 slice homemade bread
  • Dinner: Pineapple & butternut squash curry with rice & homemade flatbread
  • Snacks/Pudding: Boiled egg or a slice of pineapple

Thursday

  • Breakfast: 2 eggs on Homemade Toast
  • Lunch: Roasted Butternut Squash & Carrot Soup with homemade flatbread
  • Dinner: ‘Hawaiian’ egg fried rice
  • Snacks/Pudding: Boiled egg or a slice of pineapple

Friday

  • Breakfast: Homemade Toast with Banana Cinnamon Spread
  • Lunch: Roasted Butternut Squash & Carrot Soup with homemade flatbread
  • Dinner:  Pineapple & butternut squash curry with rice & homemade flatbread
  • Snacks/Pudding: Boiled egg or a slice of pineapple

 

Preparation

I’m counting myself very fortunate right now – I’m pretty confident in the kitchen these days and am not afraid of a simple loaf of bread, though perhaps a little apprehensive on relying on one bake to feed me for most of the week! I baked up 1 loaf of bread (below) using plain flour, fresh yeast, a pinch of salt and warm water. The crust was very crispy and the crumb looks good, the taste test will be tomorrow morning!
