    Hi my name’s Luci and I like to snack. There, I said it. If I can’t get my hands on an apple (it’s a real addiction at this point..) then I quite like Nakd bars – especially the “Crunch” ones but recently, also their new Lemon Drizzle bar. It’s like an actual lemon drizzle cake but in a bar. Made of nuts! But, they’re really hard to find (and also.. not cheap)! Ergo, I made my own lemon drizzle energy balls instead. You could easily shape them into bars if you prefer too.

  • Mini Peanut Butter Shortbread Cookies (gluten free , vegan)

    Last week, I really wanted some cookies. I know what started it – it wasn’t a random craving. At work there is a tin full of biscuits (similar to cookies, for the Americans among you but smaller, and usually with more of a crisp bite). The problem, as I’m sure you can imagine, was that I couldn’t have any! So there I was, 3pm, hankering for a biscuit with my decaf coffee and denied. Utter dismay! That evening I set about making my first batch of mini delights: these mini peanut butter shortbread cookies!

  • Homemade Vegan Shepherd’s Pie

    Yes, I know. Meatless shepherd’s pie isn’t shepherds pie BUT if I tell my mum or grandma I am making ‘shepherdess pie’ I can just picture the odd look they’ll give me. And, really, this is the pie my mum used to regularly serve for a weeknight tea. It’s got the baked beans and everything! Baked beans in shepherd’s pie seems to be relatively common among mums in England, and yet every recipe I found online neglected to add them. Perhaps I’m making some massive faux pas but… there’s beans in my vegan shepherds pie and there’s no going back now.
