Vegan Baking
Vegan baking, is it possible? Of course! I know a lot of people who wonder how it’s even possible to attempt to replicate the same rise, texture and tastes that come from traditional baking methods… but I’m here to tell you that it’s time to bring down those eyebrows of skepticism.
The trick is knowing your substitutions
I wish I could say “all you need is a flax egg” but… it’s not that simple. Some bakes just need a flax egg in place of a chicken egg… some need something different. Or a combination of substitutions. Some vegan baking recipes will do fine with just some mashed bananas or apple sauce, soy yogurt or blended silken tofu, flax or chia egg to bind them, instead of a chicken egg. The trick is knowing the texture you want to replicate.
Chia/flax eggs lean towards a chewy textures (muffins, cupcakes etc)
Soy yogurt/blended silken tofu fair best with denser bakers (like cheesecake)
Mashed bananas and applesauce work for moist or fruity bakes (pancakes, banana bread etc)

Spiced Carob Cake Bars (sugar free)
Cake bars, they’re a thing, right? Pinterest agreed when I asked Google, anyway, so I thought I could share these spiced carob cake bars. They’re sandwiched between layers of ooey-gooey date caramel and completely refined sugar-free. I’d say sugar-free, but I’m sure someone would argue about the natural sugar content of dates! So: refined sugar-free, vegan, spiced carob cake bars, let me count the ways I love you.

“Grab and give” is my new version of “grab and go” and these sugar-free apple muffins are perfect for just that. Why have I moved on from ‘grab and go’? Healthy Blueberry Muffins (Vegan)
Do you ever have those times where you just really don’t feel like baking? Or cooking? Or really doing much of anything in the kitchen? That’s been me for the past few weeks and so last week I completely gave into the feeling. No post, no social media, no emails… I just took myself on a little break. Well, not really a break because I still had work and the rest of life going on, but nothing food-related progressed until yesterday. Like a little niggle in the back of my brain, the desire to make something came back and I was out to the shops to pick up some ingredients as soon as the opened. The first thing I did after stepping foot in the kitchen was to whip up a batch of my healthy blueberry muffins, which I first made a few months ago and held off posting until I could make them again.

Vegan Mocha Chocolate Flapjacks
Flapjacks – so easy to make, but so rare to find in my house. Generally speaking, when I want something baked and chocolatey, I’ll make some kind of chocolate muffin or cupcake.
