Simple 5 Minute Roasted Red Pepper Sauce

Recently, I had to make a few table decorations as centerpieces. I set out on my task thinking that it’d take about anĀ hour. Three hours later I was a) finally finished and b) famished. I wanted dinner fast and I didn’t want a lot of fuss. And so, my simple roasted red pepper sauce was born!

To make this quick, simple and yummy roasted red pepper sauce all you need is:

  • 6 ingredients
  • a blender/food processor

Yes, that’s really it. I like to stir mine through raw courgette noodles so dinner can be ready in literally five minutes. But, if I have a bit more time (and patience) then I take extra ten minutes to boil some pasta and stir this deliciousĀ roasted red pepper sauce through that instead. And of course – plenty of nutritional yeast sprinkled poured on top is brilliant too! Chopped fresh basil adds an element of fanciness, and breadth of flavour, if you have it to hand already.

The speed trick

The trick to having this sauce ready in less time than it takes to think about it is the wondrous invention that is jarred roasted red peppers! I’ve got some that are in brine, but I’ve had the kind in oil before too. Both work absolutely fine in this recipe – just be sure to drain your oiled peppers, or reduce the rest of the liquid a little.

Ingredients

  • 1 roasted red pepper (~60g)
  • 2 tbsp tomato puree (~15g)
  • 1/4 red onion (~15g)
  • 1/8 tsp garlic powder
  • 1/2 tsp bouillon powder
  • 3 tbsp unsweetened almond milk

Directions

  1. Put all the in ingredients to a blender or food processor. Blitz until smooth.
  2. Taste and season - I like to use paprika or cumin and some cayenne pepper.
  3. Yields about 1/2 cup. Pour over pasta or courgette noodles - or even heat up as a soup!
