What time is it? Cocktail time! To be honest, it’s pretty much always cocktail time if I have a choice in the matter. This past weekend I ended up in Birmingham with my fiancé almost specifically for the purpose of drinking cocktails (with a side task of getting some wedding tasks ticked)… I managed three before I decided to call time-out on the drinking, and instead we opted for some dinner at Pho, to start soaking up all the spirits.
But, I digress. One of my lifelong ambitions is to try as many cocktails as possible. Obviously, it’s not a “real” ambition, but it makes each trip to a new bar far more fun when I get to see if they have their own versions of traditional drinks, or their very own creations! And now, I’ve started to concoct my own at home too.
Rum is one of my favoured cocktail ingredients – probably because I’ve never had a bad ‘dark and stormy’ in my life. However, unlike the Dark & Stormy, this caramel toffee apple cocktail is much further along the sweetness scale and further down the strength scale. It’s an easy drinking cocktail. It’s the kind of cocktail I like to enjoy while chilling out in the garden with a book, or during a movie night. The dried apple makes great movie snacking material too.
This toffee apple cocktail doesn’t really ascribe to any specific kind of cocktail. It’s not a martini, or smash. It’s just rum, schnapps and lemonade with some extra flavouring. Simple, sweet and yummy. It’s so simple there are just seven ingredients… and one of them is ice! So, really there’s no stopping you trying it this weekend, right?

Sweet Caramel Toffee Apple Cocktail
- 25 ml caramel rum
- 25 ml apple schnapps
- 1 tbsp toffee sf syrup
- 25 ml apple cordial
- 1 cup Lemonade approx 1 cup/240ml
- fresh apple sliced into wedges
- dried apple sliced to serve
- Mix the rum, schnapps, syrup, cordial and fresh apple in a glass.
- Add the ice and top with lemonade. Garnish with dried apple slices and serve.
